Maraschino Cherry Bars

- Crust:
- 2 cups flour
- 1/3 cup sugar
- 3/4 cup butter or margarine, softened
- Filling:
- 2 eggs, lightly beaten
- 1 cup firmly packed brown sugar
- 1/3 cup flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla
- 1 (10 ounce) jar maraschino cherries, drained and chopped (reserve juice)
- 1/2 cup chopped walnuts
- Frosting:
- 2 tablespoons butter or margarine, softened
- 2 1/2 cups powdered sugar
- 3 to 4 tablespoons reserved cherry juice
- 3 to 4 tablespoons flaked coconut
Instructions
- Preheat oven to 350 degrees. In a large bowl, combine first 3 ingredients; blend until crumbly. Press mixture into an ungreased 13x9" pan. Bake at 350 for 12 to 15 minutes, or until lightly browned.
- In small bowl, combine all filling ingredients; mix well. Pour over crust. Bake at 350 for 20 to 25 minutes, or until toothpick inserted in center comes out clean. Cool.
- In a small bowl, combine all frosting ingredients except coconut; beat until light and fluffy. Spread over cooled bars; sprinkle with coconut.
- Cut into 36 bars.
