    Maraschino Cherry Bars

    List of Ingredients


    • Crust:
    • 2 cups flour
    • 1/3 cup sugar
    • 3/4 cup butter or margarine, softened
    • Filling:
    • 2 eggs, lightly beaten
    • 1 cup firmly packed brown sugar
    • 1/3 cup flour
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1/2 teaspoon vanilla
    • 1 (10 ounce) jar maraschino cherries, drained and chopped (reserve juice)
    • 1/2 cup chopped walnuts
    • Frosting:
    • 2 tablespoons butter or margarine, softened
    • 2 1/2 cups powdered sugar
    • 3 to 4 tablespoons reserved cherry juice
    • 3 to 4 tablespoons flaked coconut


    Instructions


    1. Preheat oven to 350 degrees. In a large bowl, combine first 3 ingredients; blend until crumbly. Press mixture into an ungreased 13x9" pan. Bake at 350 for 12 to 15 minutes, or until lightly browned.
    2. In small bowl, combine all filling ingredients; mix well. Pour over crust. Bake at 350 for 20 to 25 minutes, or until toothpick inserted in center comes out clean. Cool.
    3. In a small bowl, combine all frosting ingredients except coconut; beat until light and fluffy. Spread over cooled bars; sprinkle with coconut.
    4. Cut into 36 bars.
