    Strawberry Tapioca

    List of Ingredients


    • 2 (10 ounce) packages frozen, sliced strawberries, thawed
    • 1/4 cup quick cooking tapioca
    • 1/4 teaspoon salt
    • 2 tablespoons lemon juice
    • 1/3 cup heavy whipping cream


    Instructions


    1. Drain Berries; reserving liquid. To liquid, add enough water to make 2 cups. Heat in medium saucepan with tapioca and salt, stirring constantly. Remove from heat; cool, stirring occasionally.

    2. When cold, stir in berries and lemon juice. Cover and refrigerate. Beat heavy cream until stiff. Gently fold into tapioca with spatula. Serve with a dollop of whipped cream.
