Mushroom Bacon Pie

- 1 (9 inch) frozen pie crust
- 1 pound sliced mushrooms
- 6 slices of bacon, diced
- 2 garlic cloves, minced
- 2 tablespoons chopped fresh parsley
- 3 tablespoons olive oil
- 4 beaten eggs
- 1 cup grated parmesan cheese
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground pepper
Instructions
- Preheat oven to 350 degrees. Saute mushrooms, bacon, garlic and parsley in olive oil until mushrooms are tender. Drain and cool 10 to 15 minutes.
- Combine eggs, cheese, salt and pepper. Mix well and stir into mushroom mixture. Pour into pie crust and bake for 30 minutes or until set.
- Yield: 8 servings
