    Beef: Beef Enchiladas

    List of Ingredients


    • 1 pound ground beef
    • 1 medium onion, chopped
    • 8 ounces shredded cheddar cheese
    • Sauce
    • 1 (15 ounce) can tomato sauce
    • 2/3 cup water
    • 1/3 cup chopped green onion
    • 1 tablespoon chili powder
    • 1/2 teaspoon dried mexican oregano leaves
    • 1/4 teaspoon ground cumin
    • 1 clove garlic, minced
    • Tortillas
    • 1/2 cup water
    • 1 package 6" tortillas
    • 8 ounces shredded cheddar cheese


    Instructions


    1. Preheat oven to 350 degrees. In a 10" skillet, saute ground beef over medium heat until brown. Remove from heat and drain. Stir in onion and 8 ounces cheddar cheese. Set aside.

    2. In a saucepan, combine sauce ingredients. Heat to boiling, stirring occasionally.

    3. In a 10" skillet, heat water to almost boiling. Place one tortilla in water for 2 to 3 seconds. Drain immediately. Place on a plate and repeat with remaining tortillas.

    4. Scoop approximately 1/4 cup meat mixture onto each tortilla. Roll up and place in a 9x13" baking dish. Ladle sauce over the enchiladas. Sprinkle with remaining cheese.

    5. Bake uncovered for 20 minutes or until bubbly.
