    Lemon Butter Frosting

    • 1 teaspoon lemon rind, grated
    • 6 tablespoons butter, softened
    • 3 cups powdered sugar, sifted
    • 1/4 cup lemon juice (approximately)
    • 1 dash salt


    Instructions


    1. Add lemon rind to butter; cream well.
    2. Add part of the sugar, gradually, blending after each addition.
    3. Add remaining sugar, alternately with lemon juice, until right consistency to spread.
    4. Beat thoroughly after each addition.
    5. Add salt.
    6. Makes enough frosting to cover tops and sides of two 9" layers or tops and sides of 2 8x8" layers.
