    Onions should never be stored with potatoes in the same bag. Onions tend to release gases that will alter the flavor of a potato.
    Cooking the two together in not a problem (as we all know) unless you overdo the quantity of onions and it takes over the flavor and aroma of the potato.
    If you store a boiled or baked potato in the refrigerator for 3-4 days (fat chance of that happening) it will lose approximately 90% of its nutrient value. Cooked potatoes should only be stored for 1-2 days.

    Onion Varieties
    BERMUDA

    These are the most common large, white onions. The flavor is somewhat mild and they are commonly used in salads.

    PURPLE ONION
    These are usually one of the sweetest and have the strongest flavor. They are commonly found on hamburgers and in salads.

    SPANISH
    These are light brown color, are larger than most onions and is the standard onion for cooking. When cooked it caramelizes easily and is very sweet.

    WHITE
    Smaller than most onions they are usually used in soups, stews, or dishes that are creamed.

    VIDALIA
    Are a variety of sweet onion, grown in Georgia and one of the best tasting onions.


    Cooking an onion will actually turn the sulfurs in the onion into sugars which is why onions tend to have a sweeter flavor after cooking.
