    Low Fat Chicken Enchiladas

    List of Ingredients


    • 2 pounds chicken breast
    • 2 (10 3/4 ounce) cans Healthy Request cream of chicken soup
    • 1 (16 ounce) container low fat or fat free sour cream
    • 1 (4 1/2 ounce) can chopped green chiles
    • 2 cups low fat or fat free cheddar or mozzarella cheese
    • 1 tablespoon chili seasoning
    • 8 low fat tortillas


    Instructions


    1. In a bowl, combine both cans of soup and sour cream; set aside.
    2. In a nonstick frying pan, brown chicken breast with pam.
    3. Cut chicken into small pieces or shred.
    4. Add half of the soup and sour cream mixture and the can of green chiles to the cooked chicken and warm. This is the mixture you will fill the tortillas with.
    5. Using a large baking dish (9x13" usually), fill each tortilla and wrap.
    6. Place filled tortillas in pan seam side down until done.
    7. Cover filled tortillas with remaining soup and sour cream mixture.
    8. Top with shredded cheese.
    9. Cover and bake at 350 for 40 minutes.
    10. Serves 8
