    List of Ingredients


    • 2 pounds ground beef
    • 1/2 cup chopped onion
    • 1 envelope taco seasoning mix
    • 1/2 cup water
    • 1 (16 ounce) can refried beans
    • 12 soft corn tortillas
    • 1 (8 ounce) can tomato sauce
    • 1 (8 ounce) container taco sauce
    • 2 cups shredded cheddar cheese (see note)
    • 4 cups shredded lettuce
    • 1 large tomato, chopped
    • 1 cup shredded cheddar cheese


    Instructions


    1. Brown ground beef in skillet, stirring until crumbly; drain well.
    2. Add onion. taco seasoning mix, water and refried beans; mix well.
    3. Simmer for 5 minutes, stirring occasionally.
    4. Spoon onto tortillas; roll each to enclose filling.
    5. Place seam side down, in a greased 9x13" baking dish.
    6. Mix tomato and taco sauce in bowl. Spoon over the tortillas.
    7. Sprinkle with 2 cups cheese.
    8. Microwave on High for 10 minutes or until heated thru.
    9. Sprinkle with lettuce, tomato and cheese.

    Final Comments


    NOTES: I like to use a combination of Cheddar, Colby or Longhorn and Monteray Jack cheese. Also the taco sauce can be mild or hot, whichever is preferred.
