    List of Ingredients


    • 4 boneless, skinless chicken breast halves (1 1/4 pounds)
    • 1 1/2 cups corn flake cereal
    • 1/2 cup buttermilk biscuit baking mix
    • 2 teaspoons cajun seasoning
    • 1/2 cup water
    • 2 tablespoon butter or margarine


    Instructions


    1. Flatten each chicken breast half to 1/4" thickness between sheets of waxed paper or plastic wrap.
    2. Crush cereal.
    3. Combine cereal, baking mix and cajun seasoning.
    4. Dip chicken into water, then coat with cereal mixture.
    5. Melt butter in 12" nonstick skillet over medium heat.
    6. Cook chicken in butter 8 to 10 minutes, turning once, until juice is no longer pink when centers of thickest pieces are cut.
    7. Serves 4
