    • 1/2 cup sun dried tomatoes
    • 1/2 cup reduced sodium chicken broth
    • 1 pound boneless skinless chicken breasts
    • 1/2 cup sliced mushrooms
    • 2 tablespoons chopped green onions
    • 2 cloves garlic, minced
    • 1 1/2 teaspoon capers
    • 2 tablespoons red wine
    • 1 teaspoon olive oil
    • 1/2 cup skim milk
    • 2 tablespoons cornstarch
    • 1/2 teaspoon dried basil
    • 4 cups cooked pasta


    Instructions


    1. Coarsely chop sun dried tomatoes, cover with hot broth and let stand 30 minutes.
    2. Spray a large nonstick skillet with cooking spray and heat over medium heat until hot.
    3. Add mushrooms, green onion, garlic and capers.
    4. Cook over medium heat, stirring constantly until mushrooms become soft.
    5. Add red wine and tomatoes and heat through. Remove from skillet.
    6. Add chicken and brown on both sides.
    7. Add tomato mushroom mixture. Heat to boiling, then reduce heat.
    8. Cover and simmer, stirring occasionally, about 10 minutes, or until chicken is no longer pink.
    9. Remove chicken from skillet.
    10. Combine milk, cornstarch and dried basil and mix well.
    11. Stir into tomato mixture and heat to boiling, stirring constantly.
    12. Lightly boil for 1 minute or until sauce thickens.
    13. Serve tomato mixture and chicken over pasta.
    14. Makes 4 servings at 7 points each.
