    List of Ingredients


    • 3/4 pound boneless skinless chicken breast
    • 1/2 cup mashed potato flakes
    • 1/2 cup seasoned bread crumbs
    • 1 egg, beaten
    • 2 tablespoons olive or vegetable oil


    Instructions


    1. Flatten chicken to 1/2 inch thickness; cut into 1 inch strips.
    2. In a shallow bowl, combine the potato flakes and bread crumbs.
    3. Dip chicken in egg, then in potato mixture.
    4. In a skillet, cook chicken in oil for 4 to 5 minutes or until golden.

    5. Yield: 3 servings
