    Chicken Salad To Die For

    List of Ingredients


    • Dressing:
    • 1/2 cup mayonnaise
    • 1/4 cup sour cream
    • 1 heaping tablespoon dijon mustard
    • 1 teaspoon sugar, optional
    • 1/4 teaspoon salt
    • 1/4 heaping teaspoon black pepper
    • 2 1/2 teaspoons lemon juice
    • Filling:
    • 1 1/2 cups shredded cooked chicken
    • 1/2 cup finely chopped celery
    • 2 tablespoons finely chopped green onions
    • 1/4 cup chopped toasted pecans
    • Dressing from above


    Instructions


    1. Combine dressing ingredients, mix well and store refrigerated. Combine all ingredients and chill atleast two hours, but preferably 4 to 6 hours before serving.
    2. For each sandwich: 1 thick slice sweet dark whole grain bread (or your favortite), 1/2 cup chicken salad, 3 slices crisp cooked bacon and 1 thick slice provolone or white american cheese.
    3. Spread bread with chicken salad; run under the broiler for about a minute until heated, but not bubbly. Remove from broiler and place bacon and cheese on top. Return to broiler just long enough to melt the cheese and serve immediately.
