    • Marinade:
    • 2 tablespoons olive oil
    • 2 tablespoons packed brown sugar
    • 1/2 teaspoon oregano
    • 1/4 teaspoon salt
    • 1/4 teaspoon pepper
    • 2 tablespoons red wine vinegar
    • 1 teaspoon finely chopped garlic
    • 1 bay leaf
    • Meats And Vegetables
    • 1 pound round steak, cut into strips
    • 1 tablespoon olive oil
    • 1 cup zucchini, sliced
    • 1 cup yellow squash, sliced
    • 1 cup onion, thinly sliced into rings
    • 1/4 cup fresh parsley
    • Cookied egg noodles


    Instructions


    1. In a medium bowl, stir together all marinade ingredients. Add beef strips; let stand 10 minutes. Meanwhile in a 10 inch non stick skillet, heat 1 tablespoon oil; add squash, zucchini and onion rings. Cook over medium heat, stirring occasionally, until vegetables are crispy tender (3 to 5 minutes). Remove from skillet; set aside. In same skillet, place the beef strips; reserve the marinade. Continue cooking, stirring occasionally, until meat is browned (3 to 5 minutes). Stir in squash mixture and reserved marinade. Reduce heat to medium and continue cooking until heated through. Remove the bay leaf. Sprinkle with parsley and serve over cookied noodles.
    2. Yield: 4 servings
