Tomatoes: Baked Tomatoes

- 4 medium tomatoes, halved
- 1 tablespoon plain dry bread crumbs
- 1 tablespoon grated parmesan cheese
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- Pinch ground red pepper
Instructions
- Preheat oven to 425 degrees. Spray a 9x13 inch baking pan with vegetable cooking spray.
- Cut a thin slice off bottom of each tomato half so it stands upright, place tomato halves in prepared baking pan.
- In a small bowl, combine bread crumbs, parmesan cheese, oregano, basil and red pepper. Sprinkle equal amounts of mixture over each tomato half.
- Bake 15 to 20 minutes or until topping is golden brown.
- Yields: 4 servings
