    Cherry Tomato Gratin

    List of Ingredients


    • 1/4 cup plain dried bread crumbs
    • 1/4 cup grated parmesan cheese
    • 1 tablespoon olive oil
    • 1/4 teaspoon coarsely ground black pepper
    • 1 garlic clove, crushed with garlic press.
    • 2 pints red and/or yellow cherry tomatoes
    • 2 tablespoons chopped fresh parsley


    Instructions


    1. Preheat oven to 425 degrees. In a small bowl, combine bread crumbs, parmesan cheese, olive oil, pepper and garlic. Place cherry tomatoes in a shallow 1 1/2 quart casserole or 9 1/2 inch deep pie plate. Top with bread crumb mixture; sprinkle with parsley. Bake 20 minutes or until tomatoes are heated through and crumbs are browned.
    2. Yield: 6 side dish servings
