    Corn: Fried Corn

    • 6 strips bacon
    • 1/3 cup chopped onion
    • 1/3 cup chopped bell pepper
    • 1 (16 ounce) package frozen corn
    • 1 large tomato, peeled and diced
    • 1/2 teaspoon salt
    • 1 dash pepper
    • 1 teaspoon cumin


    Instructions


    1. Fry, drain and crumble bacon. Reserve 1/4 cup drippings. Sauté onion and bell pepper in 1/4 cup bacon drippings. Add corn, tomato, salt, pepper and cumin. Cook over medium heat for about 10 minutes, stirring frequently. Sprinkle bacon pieces over top and serve.
