Mushrooms: Garlic Mushrooms

- 1 teaspoon olive oil
- cooking spray
- 5 cups (about 1 pound) quartered mushrooms
- 1/4 teaspoon crushed red pepper
- 1/8 teaspoon salt
- 10 garlic cloves, chopped
- 1/2 cup low sodium beef broth
- dash of black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Heat oil in a large skillet coated with cooking spray over medium high heat until hot.
- Add the mushrooms, crushed red pepper, salt and garlic to the skillet, saute for 3 minutes.
- Reduce heat to medium.
- Add broth and black pepper and cook 5 minutes.
- Remove from heat and sprinkle with parsley.
- Makes 4 (1/2 cup) servings at 52 calories each.
