    Potatoes: Roasted Garlic Potatoes

    List of Ingredients


    • 6 medium red potatoes, scrubbed
    • 1 large sweet onion, sliced thin
    • 4 cloves garlic, minced
    • 2 tablespoons olive oil
    • 1 teaspoon kosher salt
    • 1/2 teaspoon rosemary


    Instructions


    1. Preheat oven to 375 degrees. Spray a large baking sheet with cooking spray. Cut potatoes in 1 inch pieces and place in a large bowl.

    2. Add onion, garlic, olive oil and salt and mix well to coat all vegetables with oil.

    3. Place mixture on baking sheet, spreading out so that the potatoes and onions are in one layer.

    4. Bake 1 hour, turning potatoes with a spatula after about 30 minutes. Sprinkle rosemary over the potatoes during the last 10 minutes of baking.
