    Spaghetti Squash: Spaghetti Squash

    List of Ingredients


    • 1 (3 pound) spaghetti squash
    • 2 tablespoons light margarine or butter
    • 1/2 teaspoon dried basil
    • 1/2 teaspoon dried parsley
    • 1/4 cup grated parmesan cheese
    • salt and pepper to taste


    Instructions


    1. Wash outside of squash and cut in half lengthwise. Remove and discard seeds. Place squash cut side down in a large baking dish.

    2. Add water to a 2 inch depth in baking dish. Cut edges of squash should be completely submerged.

    3. Bake for 1 hour or until inside of squash is tender. Remove from oven and allow to cool slightly. Scrape insides of squash with tines of a fork. This will create spaghetti like strands.

    4. Place the strands of spaghetti squash in a serving bowl, add remaining ingredients and toss to coat.

    5. Makes 8 (6 ounce) servings at 77 calories each.
