    Tomatoes: Tomato Pie II

    List of Ingredients


    • 4 red ripe tomatoes, sliced about 1/2 inch thick
    • 10 fresh basil leaves, about 1 tablespoon dried and crumbled
    • 1/2 cup chopped green onion
    • 1 prebaked deep dish 9 inch pie crust
    • 1 cup grated mozzarella cheese
    • 1 cup grated cheddar cheese
    • 1 cup mayonnaise
    • Salt and pepper


    Instructions


    1. Preheat oven to 350 degrees Place tomato slices in a single layer, in a colander, in the sink. Sprinkle with salt and allow to stand and drain for 10 minutes. Layer tomato slices, basil leaves and green onion in the pie shell, sprinkle with salt and pepper to taste. Combine the mayonaise and grated cheeses and spread over the tomatoes in the pie shell. Bake about 30 minutes or until lightly browned. Serve warm
