    Zucchini: Zucchini Mozzarella Casserole

    List of Ingredients


    • 1 tablespoon plus 1 teaspoon margarine
    • 4 cups zucchini, thinly sliced
    • 1/2 cup onions, chopped
    • 2 tablespoons parsley flakes
    • 1/8 teaspoon garlic powder
    • 1/2 teaspoon dried oregano
    • 1/4 teaspoon dried basil
    • Salt and pepper to taste
    • 2 eggs, slightly beaten
    • 6 ounces shredded mozzarella cheese
    • 1 teaspoon dijon mustard


    Instructions


    1. Melt margarine in a large nonstick skillet over medium heat.

    2. Add zucchini and onions and cook 10 minutes, stirring frequently until vegetables are tender crisp. Remove from heat.

    3. Preheat oven to 350 degrees. Add seasonings to zucchini mixture.

    4. In a large bowl, combine eggs, cheese and mustard. Add zucchini mixture and stir until combined.

    5. Pour into a casserole dish that has been sprayed with nonstick cooking spray.

    6. Bake 35 minutes or until lightly browned.

    7. Makes 4 servings at 207 calories each.
