Carrot Cookies with Orange Glaze

My Grandmuzzie made these DELICIOUS cookies... I made them Gluten Free!
List of Ingredients
1 cup sugar
1 cup shortening
I cup finely grated carrots
1/2 cup water
2 eggs
1 tsp vanilla
1/2 tsp salt
3 tsp baking powder
1 cup white rice flour
1 cup brown rice flour
Oh - 1/2 cup icky chopped walnuts if you're crazy!
1/4 cup tapioca starch
1 tsp guar gum
Recipe
Mix sugar and shortening. Add carrots, eggs, water and vanilla. Mix. Add other ingredients and mix.
Drop by teasoon full onto greased cookie sheet. Bake at 374 for 14 minutes.
Orange Glaze:
Finely grate the rind of a whole orange. Add the juice of the whole orange. Add about 1/3 cube butter (not neccesary if lactose intolerant) and powdered sugar - a little at a time until thickened.
Spread with glaze when cooled about 15 minutes. SO YUMMY warm!
