    Recipe Introduction


    This recipe makes an 8 x 8 pan - you may want to double it. I added regular sugar substitutions.

    List of Ingredients




    Rich Pastry:
    1/2 cup white rice flour
    1/4 cup potato flour
    8 packets Equal (or 1/3 cup sugar)
    2 1/4 tsp cornstarch
    1/8 tsp salt
    1/2 tsp guar gum
    6 Tbsp margarine, cold, cut into pieces
    3/4 tsp vanilla
    1 tsp grated lemon rind

    Lemon filling:
    2 eggs
    18 packets Equal (or 1 cup sugar)
    1/4 cup plus two Tbsp lemon juice
    4 Tbsp margarine, melted then cooled
    1 Tbsp grated lemon rind

    Recipe



    For rich pastry: Combine dry ingredients and mix well. Cut in margarine with pastry cutter until mixuture resembles course crumbs. Sprinkle with vanilla and lemon rind. Mix with hands to form dough. Press into 8 x 8 baking pan - form dough evenly with a 1/4 inch side. Bake at 350 for 10 minutes. Let cool on wire rack.

    For lemon filling: Beat eggs and Equal until well blended. Add lemon, margarine and lemon rind. Poor over pastry and bake at 350 for 15 to 18 minutes until filling is set. Cool on wire rack.
