Gluten Free Banana Bread

Recipe Introduction
This tastes EXACTLY like regular banana bread... well, maybe better! I double this recipe because WE EAT like PIGS!!!
List of Ingredients
1 cup brown rice flour
1 cup white rice flour
1/2 cup tapioca flour/starch (OR potato flour/starch OR soy flour - this recipe does well with flour substitutions!)
1/2 tsp guar gum
1 tsp baking soda
1 1/4 tsp cream of tartar
1/2 tsp salt
1/3 cup butter - room temp
2/4 cup sugar
2 eggs, well beaten
3 ripe, mashed bananas
(If you're CRAZY, add chopped walnuts!)Recipe
In a mixing bowl, combine dry ingredients and whisk. With electric beater, cream butter, sugar, eggs and bananas. Blend all ingredients WELL.
Grease 2 bread pans and split dough in two, smoothing in pans.
Bake at 350 for 30 minutes, unless you like it darker - 40 minutes. (Check by inserting a toothpick.) When done, cool on rack.
