    Wedding Luncheon Chicken and Rice

    Recipe Introduction

    My son was going to get married and I was stressed over having to do a wedding luncheon. I came up with this yummy recipe to feed my family as a practice luncheon. (He didn't get married... YAY!!!) This meal is impressive - fancy!

    List of Ingredients


    In flat bowl or pie pan combine and mix:
    1 can cream of mushroom soup
    1 cup sour cream

    Cover 6 chicken breasts in mixture, then coat them in canned bread crumbs.

    In large baking pan or dish combine and mix:
    3 cups minute rice
    3 cups water
    1 can cream of mushroom soup
    1 cup sour cream

    Recipe

    Lay coated chicken breasts on top.

    Cover with foil and bake for about 1 hour at 400 degrees, or until chicken pulls apart easily with a fork.

    Carefully take baked chicken breasts off rice and set on a plate. Re-mix rice mixture. Serve with chicken breasts on top of bed of rice.
