    List of Ingredients


    • 1 - 1# can salmon
    • 2 cups soft bread crumbs
    • 1 tbsp chopped onion
    • 1 tbsp butter melted
    • 1/2 tsp salt
    • 1/2 cup milk
    • 1 slightly beaten egg
    • Butter sauce:
    • 3 tbsp butter
    • salt & pepper
    • 2 egg yolks, beaten
    • 3 tbsp flour
    • 1 1/2 c. milk
    • 1 tsp lemon juice


    Instructions


    1. TO MAKE LOAF: combine salmon, crumbs, chopped onion ,butter & salt. Combine milk & egg. Add to salmon mixure and mix throughly. Shape into a loaf. Place in a 7 & 1/2 X 3 & 3/4 X 2 & 1/4 loaf pan, or on a greased shollow baking pan. Bake at 350* for 35 - 40 min. Serve with Butter Sauce.
    2. BUTTER SAUCE: Melt butter in small saucepan, stir in flour, salt and petter until smooth., Add milk, eggs and lemon juice.


    Final Comments


    Suggestions: Salmon Loaf goes well served with creamed peas.
