    Preheat oven to 400F. Makes 2 loaves.


    List of Ingredients




    Instructions


    1. Dissolve 2 pkgs. dried yeast in 2 cups of warm water; stir in 1/2 cup of sugar, 1/2 cup of margarine and 1 TBS. of salt.
    2. Add 3 1/2 cups of flour and 1 cup of warm mashed potatoes (mashed with potato water, season lightly with salt and white pepper). Mix in electric mixer.
    3. Turn out of mixer bowl. Mix in 3 to 3 1/2 cups more flour with hands.
    4. Knead until smooth and bubbles appear on surface. Spread lightly with butter.
    5. Let raise in refrigerator overnight.
    6. Shape into 2 round loaves; let rise in 2 greased 9" cake pans. Again lightly butter surface of the dough. Let stand for 2 hours.
    7. Slash top of each loaf with a knife in a criss-cross pattern.
    8. Bake at 400F for 40 to 45 minutes.
    9. Cool. Dust lightly with flour.
