    Flexible Shepherd's Pie

    List of Ingredients




    1 teaspoon vegetable oil
    1 cup chopped onion
    1 1/4 pounds 93 percent-lean ground beef
    1 (.6-ounce) package au jus gravy mix (see notes)
    2 tablespoons French onion soup mix ( 1/2 packet)
    2 teaspoons bottled minced garlic
    1 (20-ounce) package commercially prepared refrigerated mashed
    potatoes (see notes)
    1 cup frozen green peas
    1 cup frozen yellow corn kernels
    1 tablespoon butter
    1/2 cup finely shredded sharp cheddar cheese

    Makes 5 servings
    Preparation and cooking time: 25 minutes

    Turn on the broiler.

    Heat the oil in a 12-inch cast-iron skillet (see notes) over medium
    heat. Peel and coarsely chop the onion, adding it to the skillet as
    you chop. Raise the heat to medium-high. Add the ground beef and
    cook, stirring frequently, until the beef is no longer pink.

    Meanwhile, prepare the au jus mix in the microwave according to
    package directions. While the beef cooks, add the French onion soup
    mix and garlic to the skillet.

    Remove the au jus from the microwave, and add it to the skillet.
    Microwave the mashed potatoes, uncovered, at high, for 2 minutes.
    Meanwhile, scatter the frozen peas and corn on top of the beef and
    stir gently to mix.

    Remove the potatoes from the microwave, and stir in the butter until
    it is melted and mixed in. Set aside. Let the beef mixture continue
    to cook and thicken slightly, about 3 minutes.

    Remove the skillet from the heat. Spoon the potatoes on top of the
    beef mixture, spreading almost to the edge. Sprinkle the cheese
    evenly on top of the potatoes and place the skillet under the
    broiler. Broil until the cheese melts, about 1 minute.

    Notes: We tested this recipe using Knorr brand au jus gravy mix. We
    also used Simply Potatoes brand refrigerated mashed potatoes, but 2
    1/2 to 3 cups of leftover mashed potatoes can be substituted. If you
    don't have a 12-inch cast-iron skillet, prepare the beef mixture in a
    regular skillet, then transfer it to a casserole dish before topping
    with potatoes.

    Per serving: 416 calories (percent of calories from fat, 37), 31
    grams protein, 35 grams carbohydrates, 5 grams fiber, 17 grams fat,
    86 milligrams cholesterol, 885 milligrams sodium
