    Italian Sausage and Pepper Sauce

    List of Ingredients






    1/2 lb. each: hot and sweet Italian sausages, casings removed, or 1 lb. bulk sausage
    1 green bell pepper, cut in strips
    1/4 c. slice red (Bermuda) onion
    1 clove garlic, minced
    1 tsp. dried oregano
    1/2 tsp. each dried basil and thyme
    1/2 tsp. salt
    1/4 tsp. freshly ground pepper
    28 oz. can plum tomatoes
    freshly grated Parmesan, Romano or Asiago

    Recipe



    In large frying pan, sauté sausage until browned. Drain off all but 1 T. fat.

    Add green pepper, onion, garlic, herbs, salt and pepper. Sauté until pepper and onion are tender, about 10 minutes, stirring frequently.

    Stir in tomatoes and their liquid, breaking up tomatoes with a fork. Simmer to reduce liquid; heat until ingredients are thoroughly heated through, about 5 more minutes. Makes about 6 c.
