    List of Ingredients




    Lemon-Herb Rub:
    1 lemon
    2 garlic cloves, crushed with garlic press
    ¼ cup loosely packed fresh oregano leaves, chopped
    ¼ cup loosely packed fresh mint leaves, chopped
    1 tablespoon olive oil
    1½ teaspoon salt
    ½ teaspoon coarsely ground black pepper

    Pork:
    3-pound boneless pork top loin roast fresh mint and oregano sprigs for garnish

    Prepare outdoor covered charcoal grill for indirect-heat cooking method with drip pan as manufacturer directs, or follow manufacturer’s directions if using covered gas or electric grill.

    Prepare Lemon-Herb Rub: From lemon, grate one tablespoons juice. In small bowl, mix lemon peel and juice with remaining ingredients except pork and garnish. With hand, rub herb mixture over pork.

    Place pork on rack in grill; cover grill and cook pork over medium heat 35 to 40 minutes, turning over once, until temperature on meat thermometer reaches 155 degrees F. Internal temperature of meat will rise 5 to 10 degrees upon standing. Transfer pork or platter or cutting board. Let stand 10 minutes to set juices for easier slicing. Garnish with mint and oregano sprigs to serve.
