***Potato Skins with Cheddar Melt***
List of Ingredients
4 medium sized baking potatoes (about 2 pounds)
4 slices lean turkey bacon
2 tbsp. vegetable oil
2 c. (8 oz.) shredded Alpine Lace Reduced Fat Cheddar Cheese
1/4 c. fat free sour cream
2 tbsp. finely chopped chives
1 tbsp. minced jalapeno pepper
Recipe
Place a piece of foil on bottom rack of oven and preheat oven to 425
degrees. Scrub the potatoes well and pierce with a fork. Place the
potatoes directly onto the rack and bake 1 hour or until tender.
Meanwhile, in a small skillet cook the bacon until crisp. Drain on
paper towels, then crumble. Using a sharp knife cut the potatoes in
half lengthwise. With a small spoon, scoop out the pulp, leaving a
1/4" shell. (Save the pulp for another use). Cut the skins into
appetizer-sized triangles. Place the skins on a baking sheet, brush
the insides with oil, and bake 15 minutes or until crisp. Remove the
skins from the oven; sprinkle with cheese and return to oven for 5
minutes. Garnish with the sour cream, chives, and pepper.
