    List of Ingredients




    3 medium lemons
    1/4 cup salad or olive oil
    1 tablespoon sugar
    1 tablespoon cider vinegar
    2 teaspoons salt
    1/4 teaspoon cayenne pepper
    1 clove garlic -- minced
    4 whole medium chicken breasts
    3 small zucchini 3/4 lb
    1/2 pound medium mushrooms
    Lemon Butter
    1/4 cup buter or margarine
    1 tablespoon lemon juice
    1 tablespoon parsley chopped
    1/2 teaspoon salt
    dash cayenne pepper

    Grate lemon peel and squeeze juice from lemons to make 1/3 cup. In bowl with fork mix lemon peel, juice, oil, sugar, vinegar, salt, cayennepepper and garlic. Set aside. Cut each breast in half and each half into 2 or 3 pieces. Cut each zucchini into 3 chunks. Trim tough stems from mushrooms. Add Chicken, zucchini and mushrooms to lemon mixture and toss to coat well. Cover and refrigerate at least 2 hrs, stir occasionally. Abt. 30mins before serving alternate chicken and vegetables on skewers and broil 15 mins or till chicken is tender. Brush with marinade if needed. Prepare lemon butter and keep warm. Serve lemon butter with kabobs and rice. In saucepan heat lemon butter ingredients till heated thru.
