Microwave Chinese Chicken
List of Ingredients
1 1/2 cups uncooked rice
1 green pepper, cut into strips
2 stalks celery, sliced
1 tablespoon cornstarch
1 10.5-ounce can cream of chicken soup
2 tablespoons soy sauce
4 chicken breasts, poached and cubed
1 1-pound can chop suey vegetables, drained
Recipe
Heat 1 1/2 cups of water, covered, in a 1-quart glass
casserole in the microwave oven for 3 minutes or until boiling.
Remove the water from the oven and stir in the rice.
Cover and let stand for 5 minutes. Fluff the rice with a fork before serving.
In a 1 1/2 quart glass casserole, mix the green peppers, celery and 1
tablespoon of water. Microwave for 3 minutes, stirring once. Combine
1/4 cup of cold water and the cornstarch. Stir the cornstarch into
the vegetables.
Blend in the soup and soy sauce. Add the chicken and chop suey
vegetates. Cover and microwave for 2 minutes. Stir. Microwave again
for another 4 minutes or until all ingredients are hot. Serve with
rice.
Serves 6.
