    With some left over rice & ham on hand this one is a winner as a side dish or load it up even further for a one dish meal.

    List of Ingredients




    2 cups cold cooked long-grain rice
    1 egg (use two eggs if you need to)
    1/4 C. salad oil (I used olive oil)
    1/2 an onion, chopped fine
    2 cloves garlic, minced
    2 or 3 whole slices of both green and red sweet peppers, diced
    some sliced mushrooms, what ever you have in the fridge
    1 cup of leftover ham or pork or beef, diced
    1/2 C. roasted & salted peanuts (left over from Christmas, of course)
    2 Tbsp. soy sauce
    A pinch of hot pepper flakes at the presentation.

    Get the rice all loose by rubbing it between your hands so that all the grains are separated.
    Lightly beat the egg. Heat 1 Tbsp. of oil in a wide frying pan or wok over medium heat. Add egg and cook, stirring, until soft curds form. Remove from pan and set aside.

    Increase heat to med-high and add 1 more Tbsp. of oil to pan. Add onion and garlic and peppers, mushrooms, ham and peanuts. Cook, stirring all the way until heated through (about 2 minutes). Remove from pan and set aside.

    Heat remaining 2 Tbsp. oil in pan. Add rice and cook, stirring, until heated through (about 2 minutes), add ham mixture and soy sauce. Add eggs, stir gently until eggs are all broken into little pieces. Serve in the centre of a good plate and sprinkle the whole works with those hot pepper flakes for an interesting touch.

    I added some other veggies. Par-cooked broccoli and or cauliflower. I 've even drizzled sesame oil over it to give it a sesame flavour, and if you do that don't forget to sprinkle the toasted sesame seeds over the dish when it is on the plate.

    Makes 4 servings.
