    List of Ingredients




    - 1 can (14-1/2 ounces) reduced-sodium fat-free chicken broth
    - 1/3 cup water
    - 1/2 teaspoon ground turmeric
    - 1 cup converted rice
    - 1/4 cup prepared medium, or hot, salsa
    - 1 medium tomato, chopped
    - Salt and pepper, to taste
    - Finely chopped cilantro or parsley, as garnish



    Recipe



    Heat chicken broth, water, and turmeric to boiling in medium
    saucepan; stir in rice and salsa. Reduce heat and simmer,
    covered, until rice is tender and liquid absorbed, 20 to 25
    minutes; stir in tomato during last 5 minutes of cooking time.
    Season to taste with salt and pepper. Spoon rice into serving
    bowl; sprinkle with cilantro.
