    Potato Salad with Garlic Mayonnaise

    List of Ingredients






    1 1/2 lb. small new potatoes or other variety
    4 T. real mayonnaise
    3 T. plain yogurt or sour cream
    1 T. white-wine vinegar
    2 cloves garlic,crushed
    salt and pepper
    2 T. snipped fresh chive, to garnish

    Recipe



    Put the potatoes in a pan of cold water, bring to a boil and simmer for 15-20 minutes or
    until tender. Leave very small potatoes whole; large ones can be halved or quartered. Put potatoes in a large bowl. In a small bowl, mix mayonnaise, yogurt, vinegar and garlic. Season to taste with salt and pepper. Fold into the potatoes while they are still warm.

    Garnish and serve.

    Note: For a more substantial salad, add 1 c. cooked diced smoked pork sausage, or 4 oz.
    sliced pepperoni,to the potatoes.

    Serves 4.
