    I love this with roasted red pepper vinaigrette or with spring herb italian vinaigrette. It's so simple, yet so tasty.

    List of Ingredients




    1 large tomato
    vinaigrette
    1 slice mozzerella cheese
    sweet basil

    Recipe



    Horizontally slice 1 tomato in half.
    Remove the seeds under running tap water, towel dry.
    Pour in your favourite vinaigrette.
    Top with a slice of mozzarella cheese.
    Microwave on high until cheese softens (don't melt it).
    Sprinkle with sweet basil.
