    6 pound pork shoulder
    Paprika (~teaspoon)
    Dried Thyme (~teaspoon)
    Salt (~teaspoon)
    Pepper (~teaspoon)
    Garlic - 6-8 cloves
    Water (~cup)
    11 ounce can of chipotle chilies in adobo sauce
    Onion - 1 small quartered
    Lime Juice - 2 to 3 limes

    Recipe



    Combine everything, except pork in food processor. Cut pork into 3-4 inch pieces. Pour mix over pork in slow cooker. Cook on high for 1 hour, then low for ~11 hours. After 11 hours drain off liquid and save, shred pork with a couple forks. Let liquid stand and drain off as much fat as possible. Put pork back in slow cooker and add back liquid to desired consistency. Reheat for ~1 hour on low setting.

    This recipe goes great with mango salsa. Dice all ingredients and combine:
    - mango
    - crushed pineapple
    - orange
    - kiwi
    - red onion
    - cilantro
    - lime juice - ~3 tablespoons
