Cheese Tortellini Soup w/ Kielbasa&Kale

List of Ingredients
2 Tbsp olive oil
1 onion chopped
1 fennell bulb chopped
4 garlic cloves minced
11/2 tblsp chopped fresh thyme
1/2 tsp crushed red pepper
Heat oil and add above and saute until softRecipe
In soup pot saute 12 oz of thinly sliced kielbasa until slightly brown
~12 min
pour off any grease.
Add vegetables and 10 cups chicken broth - bring to boil.
Stir in 4 cups chopped Kale (1/2 bunch) and 1 can cannelli beans rinsed
and drained
Simmer ~4 min (Kale wilted)
Can be made ahead to this point
Add 1 9 oz package tortellini to soup- simmer until tender but firm.
Serve with grated Parma or Asiago
