Coffee Cakes: Rhubarb Coffee Cake

List of Ingredients
1 cup soft butter or margarine
3 cups packed brown sugar
2 eggs
2 cups buttermilk
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon vanilla
4 cups flour
4 cups thinly sliced rhubarb
Topping:
1 cup granulated sugar
2 teaspoons cinnamon
1 cup chopped walnuts (optional)
Recipe
Combine butter, sugar and eggs; beat until smooth and creamy. Sift together soda, salt and flour; gradually beat into creamed mixture laterally with buttermilk. Beat in vanilla. Pour into greased and floured 9-by-13-inch baking pan.
Top with following topping: combine
1 cup granulated sugar and
2 teaspoons cinnamon (you may add 1 cup chopped walnuts, if desired) mix well and sprinkle over batter.
Bake at 350 degrees for 40 minutes or until it tests done.
Best when served warm but also very good cold.
