Chicken in Lemon and Wine

List of Ingredients
- 4 – 6 Chicken cutlets
- Italian Bread crumbs
- 12 oz. Mushrooms
- 1 – 2 tsp. butter
- Italian seasoning
- ½ cup lemon juice
- 1 cup white wine
- Garlic Clove
- Egg
- Olive Oil
- Salt & Pepper
Instructions
- Pound chicken cutlets, dip in egg, then in Italian bread crumbs.
- Coat bottom of deep frying pan with olive oil.
- Sauté breaded chicken in oil until light brown and set aside in baking dish.
- Wipe out frying pan with paper towel.
- Cut up mushrooms and sauté in 1 – 2 tsp. of butter melted in bottom of same frying pan.
- Add crushed garlic clove, salt and pepper (light on the salt), Italian seasoning.
- Add lemon juice and wine. Heat up, but don’t boil.
- Pour mushroom mixture over chicken and bake for 20 – 25 minutes at 350 degrees.
