List of Ingredients



• 2 cloves chopped garlic
  
• 1 tablespoon lime juice
  
• 1/2 tsp cumin
  
• 1/2 tsp salt
  
• 2 tablespoons vegetable oil
  
• 1 2/3 pounds fresh tomatoes, seeded, finely diced and drained
  
• 1 cup diced red onion
  
• 2 tablespoons chopped fresh cilantro
  
• 1 whole jalapeno pepper w/seeds removed chopped finely
  






Instructions



1. Combine first four ingredients, beat in oil.
   
2. Gently toss with remaining ingredients.
   
3. Marinate at room temperature for 1 hour or several hours in the refrigerator. Makes 3 cups.
