Janet and her friend eat this salad two or three times a month and even put the salad in rice wraps. (my favorite way to eat it)
List of Ingredients
3 cups Marzetti® Spicy Thai Peanut Dressing or your favorite recipe for Thai Peanut sauce
1 cucumber, peeled and sliced into quarter rounds
1 red bell pepper, matchstick cut
4 oz carrots, matchstick cut
1 head Napa cabbage, diced
1 pkg (6 oz) bean sprouts
1 cup cilantro leaves, cleaned
1-1/2 cups snow peas, blanched and julienned
500 g Udon noodles, cooked and chilled
2 tbsp black sesame seeds Recipe
In a large stainless steel mixing bowl, combine the cucumbers, red bell peppers, carrots, Napa cabbage, cilantro, snow peas and Udon noodles. Toss to blend. Add Marzetti® Spicy Thai Peanut Dressing and bean sprouts; blend well. Arrange portions and sprinkle with black sesame seeds.
