    Santa Fa Pasta Salad

    Recipe Introduction


    I use up left over chicken by shreading it into bite size pieces and adding to the top of the salad. It is also great with left over london broil steak.


    List of Ingredients


    • 1 lb bow-tie (farfalle) pasta
    • 1/3 cup salad oil
    • 2 Tblsp cider vinegar
    • 1 Tblsp minced garlic
    • 1 1/2 tsp salt
    • 1 /12 tsp cumin
    • 1 can chili beans, rinsed
    • 2 large ripe tomatoes, cut in chunks
    • 1 thinly sliced onion
    • 1/2 cup shopped cilantro
    • 6 oz pepperjack cheese, cubed
    • 1/2 cup left over chicken, or steak cut into bite size pieces


    Instructions


    1. Cook pasta as pkg directs until al dente.Drain, cool under cold running water and dain again.
    2. Meanwhile whisk oil, vinegar, garlic salt and cumin in a large bowl until well mixed together.
    3. Stir in chili beans,tomatoes, oion and cilantro and cooled drained pasta.
    4. Add cubed cheese and diced or shreaded chicken.


    Final Comments


    Be creative this works well with about any left over meats.
