Linda's Mexican Meatballs

List of Ingredients
2 lbs. hot (spicy) pork sausage or bulk pork
1/2 c. chopped onions
1/2 c. chopped green pepper
1 14.5 oz. can chopped tomatoes and green chilies
2 pkg. taco seasoning
1/2 c. crushed Ritz crackers or plain crackers
1 lg. jar any chunky salsa
3" square of Velveeta cheese, cut into small cubes (mexican is good)
1 small can black olives, chopped
1 lg. bag Tortilla chips
Recipe
In a lg. bowl, mix pork, onions, green peppers, taco seasoning, and crackers together. Form small balls.
Fry only until they lose pink color. Put meatballs into crockpot.
In a bowl, mix salsa and tomoatoes and green chilies. Add to crockpot.
Add chunks of Velveeta cheese, and heat until cheese is
completely melted in with the salsa sauce.
Stir in black olives and let heat.
Serve hot with tortilla chips, to pick up sauce.
Simmer 20-30 mins.
