List of Ingredients
Cake:
4 eggs
1 1/2 c. oil
2 c. sugar
2 c. flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
3 c. carrots, grated
1/2 c. chopped pecans
Recipe
Beat eggs. Mix with oil and sugar. Combine dry ingredients, then mix together. Grease pan and pour batter in.
Bake at 350 for 1 hr. or until done. Let cake cool.
Cream Cheese Frosting:
1 3 oz. pkg. cream cheese
1 T. milk
2 1/2 c. confectionary sugar
1 tsp. vanilla
dash salt
1/2 c. chopped pecans, optional
Combine first 5 ingredients and mix until smooth. Frost cake, sprinkle pecans on top, and put in refrigerator to chill before eating.
