    Linda's Chicken Divan Casserole

    1 10 oz. pkg. frozen cut broccoli, thawed
    2 lg. boneless chicken breasts, cooked, and cut into bitesize pieces
    4 oz. button mushrooms, sliced, sauteed, or you can use canned
    1 can Cream Of Chicken soup
    1/2 c. sour cream
    1 c. Pepperidge Farms bread stuffing mix
    2 T. Parmigiano Reggiano cheese, grated

    Recipe



    Place broccoli in bottom of 2 qt. baking dish. Top with cooked chicken and mushrooms.

    In a med. saucepan combine soup, sour cream, and broth. Heat through but do not boil.

    Pour the soup mixture into baking dish, and sprinkle stuffing mix over that.

    Top with Parmesan cheese. (See note below)

    Bake in a 350 oven, for 20-25 mins., or until heated through.

    Note:
    Lots of times I omit the Parmesan cheese, and instead mix Colby Jack and Cheddar cheeses together, and put some in with the soup mixture, then sprinkle some on top. It uses a lot more than 2 T. though. More like 2 c.
