Linda's Baked Mexican Pasta Chili

List of Ingredients
1 lb. ground beef
1 c. chopped onion
1 small can corn niblets, I use Green Giant
1 can black beans, drained
3/4 c. water
1 4 oz. pkg. taco seasoning
2 cans Ro-Tel tomatoes with green chilies
1 lb. shell macaroni, cooked, and drained
1 small can chopped green chilies
1 small can black olives, sliced
2 1/2 c. Cheddar cheese, shredded, and divided
salsa, optional
sour cream, optional
Recipe
In a lg. skillet, brown beef and onion over med heat.
Add corn, beans, water, taco seasonibg and Ro-tel tomatoes. Bring to a boil, reduce heat, and simmer for 15 mins.
Stir in shells, chilies, black olives, and 2 c. of cheese.
Pour into greased 4-5 qt. casserole.
Sprinkle with remaining cheese, and bake at 350, for 35-40 mins.
When serving, you can top with salsa and a dollop of sour cream on top.
