    non-stick cooking spray
    2 tsp. olive oil
    1 med. onion, peeled, diced
    1 15 oz. can red kidney beans, black beans or pinto beans
    2 c. chicken broth
    1 c. long grain white rice
    1 14.5 oz. can stewed tomatoes
    1/2 c. chopped cilantro
    1 med. red bell pepper, washed, cored, diced
    1 tsp. chili powder
    1/2 tsp. ground cumin
    2 T. canned green chilies, chopped

    Recipe



    Spray a lg. 3 qt. non-stick saucepan with cooking spray.

    Add oil and heat over med-high heat. Add onion, and cook until just tender, about 3-4 mins.

    Add beans, broth, rice, tomatoes, cilantro, red pepper, chili powder, cumin and chilies. Bring to a boil, cover, reduce heat to simmer, and cook until rice is tender and all liquid has been absorbed, about 20-25 mins. Serve immediately.
