Linda's Peas Almondine

List of Ingredients
1 lb. fresh peas, or 1 16 oz. bag frozen peas
1/4 c. almonds, slivered
3 T. butter
4 oz. fresh button mushrooms, or 1 4 1/2 oz. jar mushrooms, drained, optional
1/4 c. onions, or shallots, chopped
3/4 lb. carrots, optional
1/4 tsp. salt
1/8 tsp. black pepper
Recipe
Cook peas according to pkg. directions, and drain. Set aside, and keep hot.
Saute almonds in butter, until lightly browned, and add to peas.
Saute mushrooms, onions/shallots, carrots if using, and salt and pepper in same pan, until carrots are tender, and add to peas.
Mix to combine.
Serve.
